Cocktail Recipe: Rhubarb & Gin-ger Refresher

Picture this; It’s a HOT summer’s day, the air is still and the humidity is high. You want a quick-to-make, refreshing cocktail to quench your thirst, that tastes as good as the sunshine feels.

Well, look no further, cocktail loving friend, as we have got a super easy, sweet, and sassy summer treat for you today.

We were lucky to be gifted a wonderful set of Gins from Penrhos Spirits, and their Rhubarb gin was calling our name on this hot English summer day, so we had to whip up something tasty.

This cocktail has some Moscow Mule vibes, with the ginger and the lime/mint, but the rhubarb gin gives it a special twist, so if you like a Moscow Mule, and you love anything rhubarb flavoured (like me), you’re going to love this one!

Since we are looking for a refresh here, not to get sozzled, we have made this one quite light on the alcohol, but if you want more punch then feel free to increase the gin measure. 😜

The Rhubarb cordial is also optional, I preferred it with, Nick preferred it without - the question is do you have a sweet tooth, or do you like something a little more straight down the line?

Rhubarb & Gin-ger Refresher Cocktail Recipe

Serves: 1

INGREDIENTS

25ml Rhubarb Gin (Such as the Penrhos Spirits Rhubarb Gin we used)

15ml Lime Juice

15ml Rhubarb Cordial (optional - makes sweeter, more rhubarb flavour)

Ginger Ale (to top up)

Handful of Ice

Lime wedge

Sprig of mint

INSTRUCTIONS

  1. Place the ice, gin, lime juice and cordial (if using) into a rocks glass and stir well.

  2. Top up with ginger ale.

  3. Garnish with Mint and lime wedge and serve.

With its low alcohol content (as far as cocktails go) and its classic flavour mix of sweet rhubarb and spicy ginger, this one does go down pretty easy, so be careful if you’re sipping these out in the sunshine!
